Prepare the filling

  1. Beat the eggs well in a large bowl.

  2. Add the sugar and the grated rind of the lemons.

  3. Peel the lemons and mash them in a mortar, then add the lemon juice.

  4. Warm the butter and mix it with the egg and sugar mixture.

Bake

  1. Line a baking dish with the paste crust.

  2. Pour the pudding mixture into the lined dish.

  3. Bake at 350°F (175°C) for about one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and give the pudding its structure as they cook.
White sugar
Sweetens the pudding and helps balance the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavour that cuts through the richness.
Butter
Adds fat for a rich, smooth texture in the baked filling.

The step that matters

Mixing the warm butter into the egg and sugar mixture. Adding warm butter gradually keeps it from seizing into lumps, so the filling stays smooth. Eggs cooked too early can curdle, so the mixture should be combined gently and evenly before baking.
