Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and fruity flavour of the pudding filling when stewed and strained.
Butter
Adds richness and a smooth, tender texture to the filling.
Eggs
Set the filling into a custard-like texture when baked.
Sugar
Sweetens the filling and balances the tartness of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts through the richness.
Puff pastry
Forms a crisp, golden case that holds the filling while it bakes.

The step that matters

Bake until set and golden. Eggs thicken as they heat, so the filling must be baked just until set. Overbaking can make it curdle or turn rubbery and dry, while underbaking leaves it runny.

Swap the apple

How well each one fits the dish's main ingredients (butter, lemon, egg, sugar):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
