Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Coddled Apples
Ingredients
Directions
Cook the apples
Peel the apples, leaving the stems on, and place them in a saucepan.
Add a little water and boil until tender.
Carefully remove the apples and set aside.
Make the syrup
In the same water, add 1 cup of sugar and boil for 10 minutes.
Peel the lemon into very thin strips and lay them around the stems of the apples.
Return the apples to the syrup and boil until the lemon strips are clear.
Serve
Transfer the apples to a serving dish and pour the syrup over them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Hold their shape when cooked and provide the main body of the dish.
- Sugar
- Dissolves into the water to form a syrup that sweetens the apples.
- Lemon
- Its peel adds aromatic oil and a bright flavour to the syrup.
The step that matters
Return the apples to the syrup and boil until the lemon strips are clear. Boiling too hard or too long can break down the apples and make the syrup overly thick or bitter from the peel. Gentle simmering keeps the fruit intact while the peel softens and turns translucent.
Swap the lemon
How well each one fits the dish's main ingredients (apple, sugar):
- Pearfits better
- Vanillafits better
- Apricotfits better
- Lemonthe original
Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
