What each ingredient does

Indian meal
Cornmeal that thickens the water into a smooth, porridge-like gruel as it cooks.
Milk
Adds richness and softens the flavour of the gruel.
Sugar
Adds sweetness to balance the salt and any wine.

The step that matters

Mixing the meal with cold water before adding it. Cornmeal dropped into hot water clumps at once. Blending it first into a loose slurry lets the starch disperse evenly, so the gruel thickens smoothly.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (milk, white wine, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits about as well
  4. Clovefits about as well

Fit is the average pairing score against milk, white wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
