Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main body and briny flavor of the chowder.
Butter
Adds richness and fat that carries flavor and gives a smooth mouthfeel.
Flour
Thickens the clam liquor into a smooth, body-rich broth when mixed with butter.
Clam liquor
Serves as the flavorful cooking base that the chowder is built on.

The step that matters

Stirring the butter and flour into the boiling liquor. Flour mixed with butter must be fully smooth before it goes in, and the liquor must be boiling so the starch swells and thickens evenly. Adding lumpy mixture to boiling liquid can leave clumps that are hard to remove.

Swap the mace
