Boast Beef

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Set up the roast

  1. Preheat your oven to 350°F (175°C).

  2. Place a 10-pound piece of beef in the oven and roast for 2 hours.

  3. For every pound over or under, add 10 minutes to the cooking time.

  4. Do not place the meat too close to the fire at first.

Roast and finish

  1. When the beef is halfway done, turn it in the roaster.

  2. Baste the meat with the drippings 2 to 3 times during cooking.

  3. Do not salt or flour the beef until it is nearly done.

What each ingredient does

Beef
The main cut; its proteins set and firm as it cooks, giving the roast its texture.
Drippings
Fat and browned juices that baste the meat, adding moisture and savory flavor.

The step that matters

Keep the meat away from the fire at first. Intense direct heat at the start can scorch and dry the outside before the centre of a large cut has warmed through. A gentler start lets the heat reach the middle more evenly.
