Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften into a sweet, savoury base that forms the sauce around the steak.
Butter
Adds richness and fat, helping the onions soften and the sauce taste rounded.
Flour
Lightly thickens the cooking liquid so the onion sauce clings to the steak.

The step that matters

Dredge in a little flour and let it stew until the onions are soft. Flour must be stirred in before the liquid is fully thickened, or it can clump. Stewing gently until the onions are fully soft lets their sugars mellow and the sauce become smooth and well flavoured.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
