Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster (in the method)
Provides the main flavour and the body of the sauce.
White stock
Forms the liquid base that carries the lobster flavour.
Butter
Adds richness and fat, giving the sauce a smooth mouthfeel.
Flour
Mixed with butter to thicken the liquid into a smooth sauce.

The step that matters

Mixing the butter and flour before stirring it in. Blending butter and flour into a smooth paste before adding it prevents lumps, because flour clumps when dropped directly into hot liquid and needs fat to disperse evenly.
