The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the milk into a firm, wobbly gel as it cools.
Milk
Forms the liquid base and its proteins and fat give a creamy body.
Sugar
Adds sweetness and balances the mild flavor.

The step that matters

Bring the isinglass and milk to a boil. The isinglass must dissolve fully into the hot milk. Any undissolved pieces will leave lumps or weak spots, and the mixture only sets evenly once it has cooled in the molds.

Flavor stand-ins for the peach

How well each one fits the dish's main ingredients (milk, sugar):

  1. Vanillabetter flavor fit
  2. Figabout as good a flavor fit
  3. Peachthe original
  4. Raisinabout as good a flavor fit

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
