Roast Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the lamb

  1. Preheat oven to 350°F (175°C).

  2. Roast the fore quarter of lamb for about 1.5 hours, basting frequently.

Make the gravy and mint sauce

  1. For the gravy, collect the drippings from the roaster, add a little water, coarse sea salt, and flour, then bring the mixture to a boil.

  2. For the mint sauce, finely chop the mint and mix it with brown sugar and sharp vinegar.

Serve

  1. Serve the mint sauce in a sauceboat alongside the roast lamb.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fore quarter of lamb
Provides the main meat, which browns and becomes tender as it roasts.
Flour
Thickens the drippings into a smooth gravy as it heats.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar in the sauce.
Sharp vinegar
Adds acidity that cuts through the richness of the lamb and sweetens less sharply with sugar.
Fresh mint
Adds a bright, aromatic herbal flavour to the sauce.

The step that matters

Bringing the gravy to a boil. Flour must be heated long enough to swell and thicken the liquid; if it is not brought to a boil, the gravy can stay pasty and taste of raw flour.

Swap the mint

How well each one fits the dish's main ingredients (lamb, flour, sugar, vinegar):
