Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs and sugar together until well combined.

  3. Stir in the milk and season with peach water or lemon.

  4. Grease a baking dish and pour the mixture into it.

Bake

  1. Place a pan half full of water in the oven and set the pudding dish inside it.

  2. Bake for 45 minutes.

  3. Alternatively, boil the milk, pour it over the egg mixture while stirring, let it cool, then season and bake.

What each ingredient does

Eggs
Set the custard into a tender, sliceable structure as they cook.
Sugar
Sweetens the custard and helps the eggs blend smoothly with the milk.
Milk
Provides the liquid base that gives the custard its moisture and creamy texture.

The step that matters

Bake in a water bath. Setting the dish inside a pan of water keeps the oven heat gentle, so the eggs set evenly without curdling or overbaking at the edges.

Swap the peach

How well each one fits the dish's main ingredients (egg, sugar, milk, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Coconutfits about as well
