Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Colored Jelly
Ingredients
Directions
Make the jelly
Combine the syrup, water, isinglass, brandy, lemon juice, and the whites and shells of the eggs in a kettle.
Bring the mixture to a boil for 5 minutes.
Remove from heat and let it stand where it stays hot but does not boil.
Add 1 cup of cold water and let it sit for 15 minutes.
Strain the mixture through a jelly bag into molds.
Chill and serve
Refrigerate until very cold.
Serve with sugar and cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like protein that sets the liquid into a firm jelly as it cools.
- Egg whites and shells
- Coagulate during heating and collect impurities, clearing the jelly.
- Syrup from preserves
- Provides the main sweetness and flavor, and the color of the jelly.
- Brandy
- Adds aroma and flavor, and helps keep the jelly clear and stable.
- Lemon juice
- Adds acidity that brightens the flavor and balances the sweetness.
The step that matters
Letting the mixture stand after boiling. Boiling again after the egg whites have set can cloud the jelly and weaken its clarity. Keeping it hot but below a boil lets the whites and impurities settle for straining.
