Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckles or shins
Release gelatin and flavour into the water, giving the stock body as it simmers.
Onions
Add savoury sweetness and aromatic depth to the broth.
Water
Serves as the cooking liquid that extracts flavour from the bones and vegetables.

The step that matters

Boil for 6 hours. A long, gentle simmer is needed to draw gelatin out of the bones. A hard, rolling boil can cloud the stock and emulsify fat into it, so keep the liquid at a steady, low simmer.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, onion, mace, celery):

  1. Parsleyfits better
  2. Thymefits better
