What each ingredient does

Halibut
The main protein, which firms and turns flaky as it cooks.

The step that matters

Place the wrapped halibut in boiling water. Fish proteins set and toughen with prolonged heat, so the fish needs to be cooked for the stated time and not left in the water longer. Keeping the water at a boil when the fish goes in helps it cook evenly.
