What each ingredient does

Apples
Stewed to a soft pulp, they form the light, fruity body of the topping.
Egg whites
Beaten into foam, they lighten the apple mixture so it holds its shape on top.
Stale cake
Dry slices soak up the wine and give the dessert a firm, absorbent base.
White wine
Soaks into the cake, adding moisture and a sharp, tangy flavour.
Soft custard
Provides a smooth, rich layer that moistens and sweetens the dish.

The step that matters

Beating the egg whites until frothy. Under-beaten whites won't hold air, so the apple topping sinks into the custard instead of standing high. Whites beaten too far turn dry and grainy, so stop at a soft foam.

Swap the apple
