Apple Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Thinly slice the apples.

  3. Line a deep pie plate with pie crust.

  4. Layer the sliced apples in the crust.

  5. Sprinkle with brown sugar, mace or cinnamon, grated lemon peel, and small pieces of butter.

  6. Add another layer of apples and repeat the seasoning.

  7. Cover with a top crust and seal the edges.

  8. Bake in the preheated oven until the crust is golden.

  9. After baking, leave the pie in the oven with the door open for 15 minutes.
