Plum Tarts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Simmer the plums until soft, then remove the stones.

  2. Continue simmering the plums until thickened, then strain through a colander.

  3. Sweeten the plum mixture to taste.

  4. Line small tart pans with a thin layer of puff pastry.

  5. Add a rim of puff pastry around the edges, then fill with the plum mixture.

  6. Bake at 400°F (200°C) until the crust is golden and cooked through.
