Ground Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the rice base

  1. Mix 3 tablespoons of ground rice with a little cold milk.

  2. Stir the mixture into 1 quart of boiling milk and let it boil for 15 minutes, stirring constantly.

Finish and bake

  1. Once cooled, add 4 eggs, a little lemon, and sugar to taste.

  2. Line the dish with paste if desired.

  3. Bake in a preheated oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk as it boils, giving the pudding its body.
Milk
Forms the liquid base that the rice thickens and the eggs set into.
Eggs
Set during baking to give the pudding a custard-like structure.

The step that matters

Stirring the rice into boiling milk. Ground rice settles and clumps if it is not stirred constantly while it boils. Constant stirring keeps the starch dispersed so the base thickens evenly.

Swap the lemon
