What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm jelly as it cools.
Syrup of preserves
Provides the sweetness, color and flavor base of the jelly.
Egg whites and shells
Clarify the liquid, collecting cloudiness so the jelly comes out clear.
Brandy
Adds aroma and flavor while contributing a little alcohol to the jelly.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Letting it stand without boiling. After the brief boil, the mixture must rest undisturbed without boiling so the egg whites and shells can gather impurities. Boiling again would cloud the jelly and stop it from clearing properly.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, brandy, egg, sugar, cream):

Fit is the average pairing score against syrup, brandy, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
