Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried peas
Break down during long boiling to thicken the soup and give it body.
Salt pork
Adds savory fat and salty flavor that seasons the soup as it simmers.
Carrots
Add sweetness and aroma as they soften into the broth.
Onions
Build savory aroma and depth as they cook down into the broth.

The step that matters

Boil gently for 1 hour, stirring frequently to prevent scorching.. Peas and starches settle and stick to the bottom of the pot, and they scorch easily. Frequent stirring and gentle heat keep the soup from burning and tasting bitter.
