Roast Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the lamb

  1. Preheat the oven to 350°F (175°C).

  2. Roast the fore quarter of lamb for about 1.5 hours, basting frequently.

Make the gravy

  1. Collect the drippings from the roaster and add a little water, coarse sea salt, and flour to make gravy.

  2. Bring the gravy mixture to a boil.

Make the mint sauce and serve

  1. Finely chop the green mint.

  2. Mix the chopped mint with 1 cup of brown sugar and 1 cup of sharp vinegar.

  3. Stir well and serve in a sauceboat.
