Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. Cream together the butter and half of the flour.

  2. Add the brandy, grated nutmeg, and ground mace to the mixture.

  3. In a separate bowl, beat the egg yolks until very light, then add the sugar.

  4. Fold in the beaten egg whites and the remaining flour alternately.

  5. Combine all mixtures and beat steadily for 30 minutes.

Bake

  1. Pour the batter into a greased cake pan and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and richness, with beaten whites adding lift and a tender crumb.
All-purpose flour
Forms the gluten network that gives the cake its structure once mixed.
Granulated sugar
Sweetens the cake and helps it brown and hold moisture.
Unsalted butter
Adds fat for a rich, tender texture and flavour.
Brandy
Adds aroma and flavour while contributing a little moisture to the batter.

The step that matters

Beating the batter for 30 minutes. Long, steady beating incorporates air and develops gluten. Overbeating after the flour is in can make the cake tough and dense, so keep the beating steady and controlled.

Swap the mace

How well each one fits the dish's main ingredients (flour, egg, sugar, butter, brandy, nutmeg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against flour, egg, sugar, butter, brandy, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
