Green Apple Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Stew the tender sour apples and press them through a sieve.

  2. Add the egg yolks, milk, and sugar to the apple puree.

  3. Pour the mixture into a pie crust and bake without an upper crust at 350°F (175°C).

Top with meringue

  1. Beat the egg whites until stiff, then gradually add 3 tablespoons of sugar and 1 teaspoon of lemon juice.

  2. Spread the meringue on the hot pie and return it to the oven until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tender sour apples
Provide the main body of the filling and its tart flavour.
Egg yolks
Thicken the apple filling as they set during baking.
Egg whites
Whip into a stiff foam that forms the light meringue topping.
Sugar
Sweetens the filling and helps the meringue become stable and glossy.
Milk
Adds moisture and softness to the custard-like filling.

The step that matters

Beat the egg whites until stiff. Egg whites must be fully whipped before sugar is added so they hold a stable foam. Under-beaten whites will weep or collapse in the oven, while the lemon juice helps stabilise the foam.

Swap the apple

How well each one fits the dish's main ingredients (egg, milk, sugar, lemon):
