Apricot Cream

Ingredients

Directions

  1. Whip the cream and sugar to stiff peaks.

  2. Press the apricots through a fine sieve, discarding the syrup.

  3. Simmer the syrup in a saucepan until reduced by half.

  4. Add the apricot pulp, reduced syrup, lemon juice, and dissolved gelatine to the whipped cream.

  5. To decorate the mold, pour a little dissolved gelatine into it and let it coat the bottom and sides.

  6. When the gelatine is partly set, add candied cherries, citron, angelica, or pistachio nuts as desired.

  7. Fill the mold with the cream mixture and refrigerate until firm.
