Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Duchesse Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Press the boiled potatoes through a colander.

  2. Season with salt, pepper, butter, and nutmeg.

  3. Add the beaten yolks of two eggs to the mashed potatoes.

Shape

  1. Flour your pastry board and hands.

  2. Take half of the mixture and shape it into a long roll.

  3. Cut round cakes from the end of the roll.

Brown and bake

  1. Brush the top of each cake with egg white.

  2. Brown in a 400°F (200°C) oven, or place the entire roll in a greased pan, brush with egg white, and brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled potatoes
Form the mashed base that gives the dish its body and soft interior.
Butter
Adds fat for richness and a smoother, more tender texture.
Egg yolks
Enrich the mixture and help bind it so the shapes hold together.
Egg white
Brushed on top, it helps the surface brown and turn glossy in the oven.

The step that matters

Brushing the top with egg white. Egg white promotes even browning and a glossy crust. Applied unevenly or too heavily, it can leave pale patches or pool and brown unevenly.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, nutmeg, egg, flour):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Potatothe original

Fit is the average pairing score against pepper, butter, nutmeg, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
