Carrot Omelette

Oven, in the book's wordsA rather quick oven

Ingredients

Directions

The book says “a rather quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the potatoes until tender and run them through a sieve.

  2. Stir in the butter, egg, and seasoning until well combined.

  3. Grease a pie dish with butter and sprinkle breadcrumbs on the bottom.

  4. Pour the potato mixture into the dish and top with more breadcrumbs and bits of butter.

  5. Bake at 400°F (200°C) until golden and set, then turn out to serve.
