What each ingredient does

Clabbered milk
Its set curds form the body of the cheese once the whey is drained away.
Rich sweet cream
Adds fat and richness, giving the curds a softer, creamier texture.
Sugar
Adds sweetness to balance the sharp, tangy flavor of the curd.

The step that matters

Hanging the curd to strain. Draining the whey for the full 2 to 3 hours matters because leftover liquid makes the curd wet and loose, so it will not hold a firm, spoonable texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, cream, sugar, butter):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Gingerfits less well
  4. Macefits less well

Fit is the average pairing score against milk, cream, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
