Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter, sugar, and egg yolks together.

  2. Add the hot mashed potatoes and melted chocolate to the mixture.

  3. In a separate bowl, combine the flour and baking powder.

  4. Gradually add the flour mixture to the creamed mixture, alternating with the sweet milk.

  5. Fold in the egg whites beaten until stiff.

Bake

  1. Pour the batter into a greased cake pan and bake at 350°F (175°C) until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the cake tender and rich.
Flour
Forms the structure that holds the cake together as it sets.
Eggs
Add structure and richness, and whipped whites help the cake rise.
Baking powder
Releases gas during baking so the batter rises and becomes light.
Mashed potatoes
Add moisture and softness, keeping the crumb tender.
Chocolate
Adds flavor, deep color, and some fat to the batter.

The step that matters

Fold in the beaten egg whites gently. Whipped egg whites trap air that makes the cake rise. Vigorous stirring deflates the foam, leaving a denser, flatter cake, so fold with a spatula in slow, sweeping motions until just combined.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, sugar, flour, egg, chocolate):

  1. Sweet potatofits about as well
  2. Arrowrootfits about as well
  3. Potatothe original
  4. Capsicumfits about as well

Fit is the average pairing score against butter, milk, sugar, flour, egg, chocolate. Candidates are from the same food group and used in at least 100 recipes.
