Fruit Sponge Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs and sugar until light and fluffy.

  3. Add baking powder, lemon extract, flour, and cold water; mix until smooth.

  4. Pour the batter into two greased cake pans and bake until golden.

Make the filling and icing

  1. For the filling, combine minced orange, chopped pineapple, banana, and ½ cup sugar with lemon juice.

  2. For the icing, boil pineapple syrup with sugar in a 2:1 ratio until thick.

  3. Beat 2 egg whites until stiff, then gradually pour the hot syrup over them.

  4. Cook the mixture over steam until it reaches the right consistency to ice the cake.

Assemble

  1. Layer the cake with the fruit filling and top with the icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten with sugar to trap air, giving the sponge its light structure.
Flour
Provides the starch and gluten framework that sets the crumb of the cake.
Baking powder
Releases gas in the batter, helping the cake rise and become airy.
Sugar
Sweetens the cake and helps stabilise the whipped eggs and the syrup icing.
Pineapple
Adds moisture and bright acidity to the filling and the syrup icing.

The step that matters

Beating the hot syrup into the egg whites. Pouring hot syrup into egg whites gradually while beating cooks the whites and builds a stable, glossy meringue-like icing. Pouring too quickly can deflate the foam or leave it runny.

Swap the banana

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour, orange, pineapple, syrup):

  1. Vanillafits better
  2. Figfits better
  3. Limefits better
  4. Bananathe original

Fit is the average pairing score against egg, sugar, lemon, flour, orange, pineapple, syrup. Candidates are from the same food group and used in at least 100 recipes.
