Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Soak the bread crumbs in milk until soft, then measure.

  2. Add the egg yolks and beat until light.

  3. Mix in the salt, sugar, and lemon zest.

  4. Bake in a 350°F (175°C) oven until the custard sets.

Top and finish

  1. Whip the egg whites until stiff, adding 2 tablespoons of sugar.

  2. Spread jelly on top of the pudding and add the meringue.

  3. Bake until the meringue is light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up milk to form the soft base of the pudding.
Milk
Softens the bread and forms the liquid that sets into custard.
Egg yolks
Thicken the custard as it bakes, giving it a rich, set texture.
Egg whites
Whip into a stiff foam that bakes into a light, browned meringue.
Sugar
Sweetens the custard and helps the meringue brown.

The step that matters

Bake the meringue until light brown. Meringue is mostly whipped egg white and sugar, and it can easily over-brown or weep if baked too long. Watch for a light golden colour rather than a set time alone.

Swap the lemon

How well each one fits the dish's main ingredients (milk, bread, sugar, egg):
