What each ingredient does

Cucumbers
The main vegetable; it softens in the brine and absorbs the spiced vinegar as it pickles.
Strong vinegar
Provides the acidity that preserves the cucumbers and gives the pickle its sharp flavor.
Alum
Helps the cucumbers stay firm and crisp during scalding and pickling.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Allspice
Adds warm, aromatic spice flavor to the pickling liquid.
Black pepper
Adds sharp, aromatic heat to the spiced vinegar.

The step that matters

Scalding the cucumbers with alum. Alum firms the cucumber's cell structure so it stays crisp rather than turning soft. Using the right amount matters, since too much alum can make the pickles harsh and bitter, while too little leaves them limp.

Swap the garlic

How well each one fits the dish's main ingredients (cucumber, vinegar, sugar, allspice, pepper):

  1. Cinnamonfits better
  2. Clovefits better
  3. Tarragonfits better
  4. Garlicthe original

Fit is the average pairing score against cucumber, vinegar, sugar, allspice, pepper. Candidates are from the same food group and used in at least 100 recipes.
