Greex Turtle Soup

Ingredients

Directions

  1. Fry the ham in a saucepan until rendered.

  2. Add the chopped onion, bay leaf, cloves, mace, celery tops, salt, and white pepper.

  3. Pour in the soup stock and simmer for 30 minutes.

  4. Heat the turtle stock and strain the seasoning into it.

  5. Cut the turtle into pieces and add to the stock.

  6. Stir in the dry sherry and do not let the soup boil.

  7. Taste for seasoning and add herbs if needed, tying them to the saucepan handle.

  8. If the soup is not dark enough, brown a little flour and add it.

  9. Keep the soup hot until serving, then add lemon slices and the quartered yolk of the hard boiled egg.
