Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

Prepare

  1. Wash and scrub the oyster shells thoroughly, then rinse in cold water.

  2. Place the oysters in a steamer, shell side down, over a pot of boiling water.

  3. Steam for about 6 minutes, or until the shells open.

  4. Prepare a hot dish with melted butter, seasoned with Worcestershire sauce, lemon juice, salt, and cayenne.

Serve

  1. Using gloved hands, remove the oysters from the steamer and pick them out with a flat knife, saving the juice.

  2. Dip the oysters in the seasoned butter as you open them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flesh; steaming gently cooks them while the shells open.
Melted butter
Adds fat and richness, carrying the seasonings and coating each oyster.
Lemon juice
Adds acidity that brightens the rich butter and sharpens the oyster flavour.

The step that matters

Steaming time. Steam only until the shells open, about 6 minutes. Overcooking toughens the oyster flesh and makes it rubbery, while undercooking leaves shells closed and the oysters unsafe to eat.
