Mince Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Simmer the filling on the back of the stove for 30 minutes.
While warm, add ½ cup of brandy and store in jars.
Line pie plates with crust or puff pastry and fill with the mince mixture.
Cover with a buttered paper and bake in a 350°F (175°C) oven.
Remove from the oven and top each pie with beaten egg whites.
Return to the oven briefly to lightly brown the tops and serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
