Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and helps give the jelly a clear, smooth body.
Lemons
Add acidity and bright flavour that balances the sweetness.
Orange
Adds juice and citrus aroma to the jelly.

The step that matters

Soak the gelatine fully before heating. Gelatine must hydrate in cold water first so it dissolves evenly when heated. Undissolved granules or overheating can leave lumps or weaken its setting power.

Swap the nuts

How well each one fits the dish's main ingredients (lemon, orange, sugar, almond, raisin, grape):

  1. Pistachiofits better
  2. Chestnutfits better
  3. Brazil nutfits better
  4. Nutsthe original

Fit is the average pairing score against lemon, orange, sugar, almond, raisin, grape. Candidates are from the same food group and used in at least 100 recipes.
