Ingredients

Directions

  1. Place ducks in boiling water for a few minutes to loosen the skin, then remove the skin completely.

  2. Wash the ducks thoroughly inside and out, then wipe dry with a cloth.

  3. Season the ducks inside and out with sage and onions.

  4. Roast the ducks, basting frequently.

  5. Make gravy by stewing the necks, livers, hearts, and gizzards in a small saucepan with butter and flour.

  6. Skim the fat from the gravy and pour it over the roasted ducks.
