Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the liquid as it cooks, giving the pudding its body.
Egg yolks
Enrich the custard and help it set into a creamy texture.
Milk
Forms the main liquid base and adds richness and softness.
Sugar
Sweetens the pudding and balances the flavour.
Egg whites
Beaten to stiff peaks to form a light, airy layer over the custard.

The step that matters

Heat the mixture with milk and boil as you would soft custard. Tapioca starch only thickens fully when the mixture reaches a boil, and egg yolks can curdle if overheated. Stirring steadily while it cooks keeps the custard smooth.
