What each ingredient does

Concord grapes
Provide the fruit pulp and skins that give the preserves their flavor and natural pectin.
Sugar
Sweetens the preserves and helps the mixture thicken and set as it boils.

The step that matters

Boil until jellied. Sugar and pectin only set into a gel when enough water cooks off and the mixture reaches the right concentration. Undercooked preserves stay runny, while overcooking can make them stiff or sugary.
