Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and juice that gives the ice cream its colour and taste.
Sugar
Sweetens the fruit and draws out its juice as it stands.
Lemon juice
Adds acidity that brightens the strawberry flavour and helps keep its colour.
Cream
Supplies fat that gives the frozen ice cream a smooth, rich texture.

The step that matters

Freeze immediately. Once the strawberry juice is mixed into the cream, the mixture should be frozen right away so that ice crystals stay small and the texture remains smooth rather than icy or separated.
