What each ingredient does

Green corn
Provides the main body and sweetness of the chowder.
Potatoes
Add starch and body, thickening the chowder as they soften.
Boston crackers
Soak up liquid and help thicken the chowder.
Milk
Adds creaminess and softens the chowder's flavor.
Butter
Adds fat and richness, and browned butter gives a nutty aroma.
Beaten egg
Enriches the chowder and helps give it a smoother, thicker texture.

The step that matters

Adding the beaten egg and milk. Adding egg or milk to very hot liquid can curdle it. Stirring continuously and adding the milk to the tureen helps keep the chowder smooth.
