Jonquil Eggs

Ingredients

Directions

  1. Whip the egg whites to a stiff froth.

  2. Half fill buttered ramekins with the whipped egg whites.

  3. Make a depression in the center of each and drop an egg yolk into the hollow.

  4. Set the ramekins in shallow boiling water, cover, and cook for three minutes.

  5. For a larger dish, make mounds of the whipped egg whites on a buttered platter, hollow each mound to receive the yolk, and cook as above.
