Fried Salsify

Ingredients

Directions

  1. Scrape and cut salsify into short pieces, placing them in cold water.

  2. Boil in salted water until tender, then drain.

  3. Mash the salsify while hot, removing any woody bits, and season with salt, pepper, and butter.

  4. Let the mixture cool, then add enough milk to form a thick paste.

  5. Beat in one whipped egg for each cup of paste.

  6. Shape the mixture into round, flat cakes using floured hands, then coat with flour.

  7. Fry in hot fat until light brown and serve hot.
