Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and juice that gives the foam its colour and taste.
Gelatine
Sets the liquid into a light, wobbly structure once chilled.
Whipped cream
Adds air and richness, giving the foam a light, creamy texture.
Sugar
Sweetens the foam and helps balance the tartness of the fruit and lemon.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Dissolving the gelatine fully. Gelatine must be soaked, then heated until dissolved and not allowed to set early, because undissolved or lumpy gelatine leaves a grainy texture and uneven setting. Strain the mixture before it thickens to remove any bits.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
