What each ingredient does

Oysters
Are the main food being preserved, becoming firm and tender as they cook briefly and then pickle.
Vinegar
Provides the acidity that preserves the oysters and gives the pickle its sharp, tangy flavour.
Allspice
Adds warm, aromatic flavour to the pickling liquid.
Peppercorns
Add sharp, aromatic heat that infuses into the pickling liquid.
Lemon
Adds fresh citrus acidity and aroma to the finished oysters.

The step that matters

Removing the oysters as soon as they boil. Oysters toughen and shrink when overcooked, so they should be taken off the heat the moment they boil, while the pickling liquid is still gentle and clear.

Swap the mace

How well each one fits the dish's main ingredients (oyster, vinegar, allspice, pepper, lemon):

  1. Marjoramfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, vinegar, allspice, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes.
