Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the beets and place them in a pan.

  2. Bake in a 350°F (175°C) oven until very soft.

  3. Remove from the oven and peel the skins off.

  4. Slice the beets and dress with butter, pepper, and coarse sea salt, or vinegar if preferred.

  5. Alternatively, you can boil the beets and dress them the same way.
