Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Preserved Peaches
Ingredients
Directions
Prepare the peaches
Cut the peaches longitudinally to the stone and twist to remove the stone.
Peel and weigh the peaches.
For each pound of fruit, weigh out 1 pound of sugar and add ½ cup of water.
Make the syrup
Dissolve the sugar completely before heating.
Add the beaten egg white or dissolved isinglass to the sugar mixture.
Heat the syrup until it boils, skimming off any scum.
Once the scum stops rising, remove the syrup from heat and wash the kettle.
Cook and preserve
Return the syrup to the kettle, add the peaches, and boil for about 1 hour and 15 minutes until translucent.
Carefully remove the peaches and place them on dishes without touching.
Let the syrup cool to lukewarm, then pour it over the peaches in jars and seal the jars the next day.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Peaches
- Provide the fruit that becomes translucent and tender during the long simmer in syrup.
- Sugar
- Sweetens the fruit and, at this high concentration, helps preserve it.
- Egg white or isinglass
- Clarifies the syrup by binding scum and impurities so they can be skimmed off.
The step that matters
Skimming the syrup while it boils. Scum rising from the syrup carries impurities that would cloud the preserve. Removing it fully, until it stops rising, keeps the syrup clear and the fruit attractive.
Swap the peach
How well each one fits the dish's main ingredients (sugar, egg):

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
