Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down while simmering to give the soup body and a thicker texture.
Onions
Add sweetness and savory depth as they soften in the broth.
Turnips
Contribute a mild, slightly peppery flavor and firm texture to the soup.
Carrot
Adds natural sweetness and color to the broth.
Chopped parsley
Adds fresh, green aroma when added near the end of cooking.

The step that matters

Boil the mixture until it reduces to 1 quart. Reducing by simmering concentrates the flavor of the vegetables and water, so the soup tastes richer. Boiling too hard can cloud the broth and break the vegetables apart unevenly.

Swap the onion

How well each one fits the dish's main ingredients (potato, turnip, carrot, parsley):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits better
  4. Onionthe original
