Potato Jelly

Ingredients

Directions

Prepare the farina

  1. Grate white potatoes into cold water and stir well.

  2. Strain the mixture through a fine sieve.

  3. Let it stand for a couple of hours until the farina settles at the bottom.

  4. Pour off the water and set the vessel on its side to let the farina dry completely.

Make the jelly

  1. Take 1 teaspoon of the farina and mix it smoothly with a little cold water.

  2. Pour boiling water over the mixture to create a thick jelly.

  3. Boil for 2-3 minutes, sweeten to taste, and flavor with lemon or nutmeg.

  4. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White potatoes
Their starch, released as farina, becomes the thickening base of the jelly.
Boiling water
Heat swells and gelatinizes the potato starch, turning the mixture thick.
Sugar
Adds sweetness to balance the mild, starchy flavor of the jelly.

The step that matters

Let the farina dry completely. Residual water left in the farina dilutes the starch, so the jelly may fail to thicken properly when boiling water is added.

Swap the potato

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Potatothe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
