Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the water into a firm, wobbly jelly as it cools.
Lemon juice
Adds acidity and bright flavour that balances the sugar.
Egg whites
Trap impurities when heated, which are removed by straining to clarify the jelly.

The step that matters

Straining the mixture again until perfectly clear. Clarity depends on the egg whites collecting cloudy particles as they heat and then being strained out completely. Rushing this step or skipping the second strain leaves the jelly cloudy.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
