What each ingredient does

Large oysters
Are the main food, cooked through quickly in hot fat to stay tender inside.
Cracker crumbs
Form a crisp, golden coating that browns when fried.
Eggs
Bind the cracker crumbs to the oysters so the coating holds during frying.
Thick cream
Adds richness and moisture to the egg mixture, keeping the coating tender.
Butter or a mix of butter and lard
Conducts heat for frying and adds rich flavour and browning.

The step that matters

Fry in plenty of hot fat. Enough hot fat heats the oysters quickly so the coating crisps and browns before the oysters overcook. Cold or scant fat lets the coating soak up grease and the oysters toughen.
